We have discovered something pretty great just recently, roasted tomatillo avocado salsa. Believe us this little recipe is delish! We dip our chips in it, we put it on our eggs, in fact the only thing we don't do is drink it.
By roasting pretty much all the ingredients you bring out that roasty flavor as well as bring out the sweetness in the shallots and garlic. Roasting the ingredients only takes five minutes than you can let your blender do the rest of the work.
This is definitely a different take on guacamole or salsa. It's spicy and tart all at the same time. Just one little tip don't forget to rinse off the tomatillo's when you pull the leaves back, they tend to be a little slimy. This recipe holds well for a few days in the fridge but I'm pretty sure it won't last that long.
