Guacamole and Margarita's are pretty much our staple combo. We eat a LOT of guacamole and while avocados are good for you if you quite a few it's not as healthy. I discovered a healthier version, it's just the same but you use asparagus. Yup that's right it's the one surprise element to this guacamole. You can't even taste the difference. I had my sisters try it and they had no idea what was different. It's great to entertain with and I bet NO ONE will ever know your little healthy ingredient.
Healthy Guacamole:
2 medium avocados
10-12 asparagus stalks
diced tomato
1 tbsp of lime juice
salt and garlic powder to taste
*diced jalapeno is optional
Cut the avocados in half, remove the pit and scoop out the inside. Chop the ends of the asparagus and discard. Chop the remaining asparagus into smaller pieces. Throw it all in a blender and puree until smooth. Chop up the tomatoes, add them as well as the salt, lime juice and garlic powder. Serve immediately.
